The spirit we take to cooking, like many establishments, is to use good quality, local ingredients and to be connected to the seasons (if you're into this too then this is a great website to check out. For us it's not just about it being better from an ethical perspective but it's also nice to eat things when it's the right time to eat them and when they've been grown or caught nearby - so we think when you're by the sea you want fish that's come out of that sea, and when it's freezing cold and you've been out walking on the beach you want to come back and sit by a fire and eat something comforting like toad in the hole, and it's nice to know the sausages came from up the road, as long as they're good sausages of course, which hopefully you'll agree they are.
